Sandwich Pinot Gris 2019
Very special vinification gave this orange/rose wine a pretty special expression: aromas of orange, apple and summer flowers twisted in a bubble-gummy way, good acidity and minerality, complex but light body.
Grapes: 100% Pinot Gris
Vinification: 3-4 weeks of fermentation in sandwich method: a lot of whole bunches between 2 layers of crushed grapes. After the fermentation, spent 8 months in oak barrels, on the fine lees, with no sulphite. Got a tiny amount of sulphites before bottling.
50 percent of the grapes are coming from unpruned vines, wich gives a noticeable difference in the grapes - more balanced ripening, better acids, better pH.. After the fermentation, spent 8 months in oak barrels, on the fine lees, with no sulphite.
András Mátyás: "With this method I tried to show and express not only the terroir and our beliefs in the winemaking, but also to find something unique in the pinot gris, which I was lacking in the traditionally made pinot gris. I think I found it!"
